Banana and Coconut Bread

Simply because it's lockdown and because I feel that you can never have enough banana bread recipes.. Let's face it, banana bread is always a winner. Do I need to say more? Didn't think so ;)


Let's get baking!



Ingredients

This recipe is for one loaf.

  • 3 ripe bananas

  • 3 medium eggs

  • 50g coconut oil, melted

  • 45g maple syrup

  • 270g ground almonds

  • 50g desiccated coconut

  • 2 tsp baking powder

  • 2 tsp cinnamon

  • 1 tsp vanilla extract

  • ¼ tsp salt


Method

  • Preheat the oven to 180º C and line a loaf tin with parchment paper.

  • Peel the bananas and mash them in a large bowl with a fork.

  • Whisk in the eggs, the (liquid) coconut oil, maple syrup and vanilla extract.

  • Then add the remaining ingredients and fold through with a spatula until all ingredients are combined.

  • Pour the batter into the tin and put in the oven to bake for 40-45 minutes.

  • Test with a skewer/ toothpick to see if your cake is done. If it comes out dry and clean your cake is ready.

  • Leave to cool down for at least 10 minutes.
