Banana and Coconut Bread

Simply because it's lockdown and because I feel that you can never have enough banana bread recipes.. Let's face it, banana bread is always a winner. Do I need to say more? Didn't think so ;)
Let's get baking!

Ingredients
This recipe is for one loaf.
3 ripe bananas
3 medium eggs
50g coconut oil, melted
45g maple syrup
270g ground almonds
50g desiccated coconut
2 tsp baking powder
2 tsp cinnamon
1 tsp vanilla extract
¼ tsp salt
Method
Preheat the oven to 180º C and line a loaf tin with parchment paper.
Peel the bananas and mash them in a large bowl with a fork.
Whisk in the eggs, the (liquid) coconut oil, maple syrup and vanilla extract.
Then add the remaining ingredients and fold through with a spatula until all ingredients are combined.
Pour the batter into the tin and put in the oven to bake for 40-45 minutes.
Test with a skewer/ toothpick to see if your cake is done. If it comes out dry and clean your cake is ready.
Leave to cool down for at least 10 minutes.
